Preheat the oven to 200 °C and line a large baking tray with baking paper.
Remove the pizza dough from the package and place it on a cutting board. Using a rolling pin, roll out the dough into a 1/4-inch thick rectangle. Cut the rolled out dough in half lengthwise with a pizza cutter. Next, cut each dough rectangle into 12.1-inch strips. You will need 24 pieces of fabric in total.
Place a sausage on top of each strip of dough. Roll the sausage pieces tightly into the dough, making sure they are completely coated.
Add water to a medium saucepan over medium heat. Bring the water to a gentle boil. Add baking soda and stir until dissolved.
Add the pretzel dogs to the boiling water in 3-4 portions. Bake for 20-30 seconds, then remove with a slotted spoon and place on a baking sheet lined with baking paper. Repeat process with remaining pretzel dogs.
Using a pastry brush, brush the outside with the beaten egg. Sprinkle each piece evenly with salt.
Bake for 15-18 minutes or until the dough is golden brown.
Serve with cheese sauce for dipping.
