Garlic Butter Steak and Potatoes Skillet

Ingredients

  • 2-4 petit steaks *See notes
  • salt and pepper taste
  • Garlic powder as desired
  • 1 tablespoon olive oil
  • 2 to 4 pounds baby potatoes, diced
  • 2-6 tablespoons salted butter (soft enough to mash with a fork), 1 tablespoon per steak, 2 tablespoons for each potato
  • 2 teaspoons minced garlic
  • 1 teaspoon dried Italian herb blend
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh parsley

Instructions

Preheat oven to 400 degrees. Combine butter, garlic, and dried herbs in a small bowl and set aside. Generously sprinkle both sides of the steak with salt, pepper, and garlic powder.
Heat
a frying pan over medium heat and add oil little by little. Grill the steaks for 2 to 3 minutes on each side, until golden brown. Transfer to a plate and set aside.
Add
the potatoes to the pot, season generously with salt, pepper, and garlic powder, and sauté until golden brown, 3 to 5 minutes. Move the potatoes to one side of the pan and return the steak to the other side of the pan.
Place
in the oven and cook for 15 to 20 minutes, until the potatoes are fork-tender and the steak is done to your liking.
As
soon as you take it out of the oven, put a dollop of garlic butter on each steak, put the rest on top of the potatoes, let it melt over the food, then stir the potatoes to coat them in the butter and add before serving. Top with chopped thyme and parsley. .
