Creamy Tuscan Shrimp


1 pound shrimp, peeled and shelled
2 tablespoons butter, chopped
1/2 onion
3 teaspoons minced garlic
1/4 °C Sun-dried tomatoes, chopped
1 1/2 °C Whites
1/2 °C Parmesan cheese, grated
3-4 °C baby spinach, fresh
Italian seasoning 1 teaspoon
Salt and pepper to taste
Chopped fresh parsley for garnish

Melt the butter in a saucepan over medium heat. .
Add the shrimp to the frying pan and fry until cooked through. Season with salt and pepper.
Stir the garlic into the pot during the last 30 seconds of cooking the shrimp. Remove the shrimp and set aside.
Reduce the heat to medium and add the onions with the remaining butter to the same skillet and sauté until the onions are soft.
Add sun-dried tomatoes to the frying pan and fry for 1 minute.
Pour in the white wine and deglaze the pan. Boil until the water is reduced by half.
Add whipped cream, Italian spices, salt and pepper and mix.
Cook until mixture thickens, then stir in Parmesan cheese.
Add spinach to the pan and sauté until wilted.
Return the shrimp to the pot, brush with the sauce and serve.
