BRAISED SOY SAUCE PORK BELLY
Ingredients
800g pork belly (cut into 3-4cm thick pieces)
1/2 cup Chinese liquor
3 tablespoons soy sauce
1/2 tablespoon dark soy sauce (for coloring, if desired)
4-5 ginger slices
1 tablespoon sugar
2 star anise

Instructions
Bring to a boil – Bring a pot of water to a boil. Add the pork to the pot and simmer for about 5 minutes. Discard the boiling water and rinse the pork with cold water.
Stew – Add pork belly, soy sauce, dark soy sauce, sake, ginger, sugar, and star anise to the pot. Add water until just enough to cover the meat. Reduce heat, cover, and simmer for about 60 minutes.
Caramelize – Place over high heat, remove lid, and allow the liquid to evaporate and thicken. Toss the pork over to make sure the meat is evenly coated. The result should be a rich, glistening sauce that coats the tender pork belly.
