Lemon Grilled Chicken Wings
Ingredients
For the brine:
1/3 cup kosher salt
2/3 cup brown sugar
1 gallon cold water
Main recipe:
4 pounds chicken wings
Hardcore Carnivore Red Seasoning 3-4 tablespoons
preference of BBQ Sauce 1 cup
Lemon Grilled Chicken Wings
Directions
Start soaking the wings 24 hours before cooking. Mix sugar and salt with about 2 cups of water. Heat over low heat, stirring regularly until melted. Pour cold water into a large container. Add brine. If it’s warm, you can add a few ice cubes. Add the chicken wings and let it sit in the refrigerator overnight.
Preheat smoker or pellet grill to 275°F.
Remove the wings from the brine. Drain the wings and pat dry with paper towels. Season the wings with
Hardcore Carnivore Red Seasoning and make sure they are well coated. Place the chicken wings on the smoker or pellet grill and cook until the internal temperature is 165°F. Be careful not to let the thermometer probe touch the bone or penetrate too far into the meat. Otherwise, you will get inaccurate measurements.
Once the desired temperature is reached, remove the wings from the smoker or pellet grill, pour the sauce over them and fry until coated. Serve immediately.
