Air Fryer Zucchini Corn Fritters
Ingredients
1 pound zucchini (about 2 medium zucchini)
1 cup corn kernels (canned or frozen)
1/4 cup grated Parmesan cheese
Yellow onion, grated 1/4 cup chopped garlic
1 tablespoon dried parsley
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried basil

Tea 1/2 spoon dried Organo
Peppers 1/4 teaspoon 1/4
2 eggs, lightly melted lightly
1 cup Baking powder

Air Fryer Zucchini Corn Fritters
Instruction
Preheat air fryer to 360°F.
Use the large holes of a box grater to shred the zucchini. Place the grated zucchini on a kitchen towel.
Wrap the zucchini in a kitchen towel and squeeze out as much water as possible. Place the zucchini in a large bowl.
Add the corn kernels, cheese, onion, garlic, parsley, salt, pepper, basil, oregano, paprika, and beaten egg to the zucchini. Stir to combine.
Add flour and baking powder. Stir until everything is well mixed. If the mixture is too wet, add more flour. The drier the zucchini, the less flour you will need.
Make 10 to 12 patties from the mixture.
Optional: Place the raw patty in the freezer for about 5-8 minutes to keep its shape.
Coat the airfryer basket with cooking spray.
Work in batches – Don’t overfill the air fryer basket. Place the patties in a single layer in the air fryer and spray each patty with cooking spray. Cook for 6 minutes.
Flip the patty. Spray with cooking spray and cook for an additional 6 to 8 minutes or until golden brown.
Remove from hot air fryer and enjoy.
