Ingredients:

  • 360 g thinly sliced ​​sirloin steak (about 3 thin steaks), cut into thin strips
  • 1 small egg
  •  4 tbsp cornstarch
  •  1/4 tsp salt
  • 1/4 tsp black pepper
  •  1/8 tsp white pepper
  •  4 1/2 tbsp sunflower oil (divided)
  •  1 medium onion, peeled and sliced ​​
  •  1 red chili pepper, chopped (as desired)
  •  1 teaspoon minced ginger
  • 3 peeled and minced garlic cloves
  •  2 tablespoons rice vinegar
  •  3 tablespoons dark soy sauce
  •  2 tablespoons tomato puree
  •  6 tablespoons powdered sugar or fine sugar
  • 2 tablespoons tomato ketchup
  •  2 tablespoons sweet chili sauce (Thai style)
  •  chopped green onions or coriander for garnish (optional)

Directions:

  • Place the steak strips in a bowl and add the eggs. Mix well to coat the steak with the eggs.
  •  Add cornstarch, salt, black pepper, and white pepper to the bowl. Mix everything together until steak is evenly coated. This will result in a sticky mixture.
  •  Heat 3 tablespoons oil in a large skillet or wok over high heat until very hot. You may need to work in two batches. Add half of the beef strips to the hot oil and spread out in a single layer.
  •  Sauté steak, stirring occasionally, until browned and crispy, about 5 to 6 minutes. Avoid moving the meat too much for maximum crispiness.
  • Using a slotted spoon or tongs, remove the crispy beef from the skillet and place on a paper towel-lined bowl to absorb excess oil. Repeat this process with remaining beef.
  •  When all the beef is cooked, add the remaining half tablespoon of oil to the skillet and reduce heat to medium. Add the sliced ​​onions and cook for 2 minutes, until slightly softened.
  •  Add the sliced ​​chili peppers, minced ginger, and minced garlic to the pot. Cook, stirring, for about 30 seconds.
  •  Add rice vinegar, soy sauce, tomato puree, sugar, tomato ketchup, and sweet chili sauce. Increase the heat and simmer for a few minutes until the sauce begins to reduce slightly.
  •  Return the crispy beef to the pot, stir to coat with the sauce, and cook until hot, 1 to 2 minutes.
  •  Serve the crispy chilli beef immediately, garnishing with chopped green onions and coriander if desired. Enjoy with rice or noodles.
