Ingredients

4 green peppers
1 pound taco meat (use any taco seasoning)
1 package Knorr Taco Rice
1 colander can Rotel
1 cup grated Mexican cheese, divided

Directions

Preheat oven to 350° . I prefer to cut off the top of the pepper, but if the bottom is not flat, cut it in half (as pictured), remove the seeds, place the pepper in a bowl (cut side up) and leave it alone. Masu. They bake for 20 minutes while I prepare everything else.
Prepare taco meat and cook Knorr Taco Rice according to package instructions.
Mix taco meat, half of Knorr Taco Rice (kids usually eat the other half themselves), drained Rotel, and 1/2 cup of shredded cheese. Remove peppers from oven and stuff with taco meat mixture. Top with the remaining cheese and cover with aluminum foil. Bake covered for 20 minutes and uncovered for 10 minutes until ready to eat.
