– 2 ribeye steaks, about 1 inch thick
– 4 large eggs
– Salt and pepper to taste
– 2 tablespoons olive oil
– 1 tablespoon butter
– Fresh herbs for garnish, such as rosemary or thyme )

Ingredients

1. Let the steak rest at room temperature for about 30 minutes. Sprinkle generously with salt and pepper on both sides.
2. Heat the grill or frying pan over high heat. Add 1 tablespoon of olive oil and cook the steak for medium-rare, about 4 to 5 minutes per side, or until desired doneness.
3. Let the steak rest for 5 to 10 minutes before cutting.
4. While the steak is resting, heat a nonstick skillet over medium heat. Add the butter and crack the eggs into the skillet. Be careful not to break the egg yolk.
5. Cook the eggs until the whites are set but the yolks are still runny, about 2 to 3 minutes. Season with salt and pepper.
6. Top the steak with a fried egg and serve with fresh herbs.
