Ingredients:

Wood chips

1/4 cup paprika
1/4 cup white sugar
1/4 cup ground cumin
1/4 cup cayenne pepper
1/4 cup brown sugar
1/4 cup chili powder
1/4 cup garlic powder
1/4 cup onion powder
1/4 cup kosher salt 44 freshly ground black pepper 44 1/4 cup to taste 10 pounds or more brisket

Directions:

Step 1: Add wood chips to water. Soak in a bowl for 8 hours to overnight.
Step 2: Soak the wood chips in a bowl of water for 8 hours to overnight.
Step 3: Preheat the smoker to a temperature of 104°C (220°F) to 110°C (230°F). Drain the wood chips and put them in the smoker.
Step 4: Smoke the brisket in the preheated smoker until it reaches an internal temperature of 74°C (165°F), about 12 1/2 hours. Wrap the brisket tightly in butcher paper or heavy-duty aluminum foil and return to the smoker.
Step 5: Continue smoking for about another hour until the internal temperature of the brisket reaches 185°F (85°C).
