2 rib-eye steaks (approximately 1 inch thick)
salt (to taste)
freshly ground black pepper (to taste)
2 tablespoons olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
fresh Thyme or Rosemary (optional)

Remove the ribeye steak from the refrigerator and let it come to room temperature about 30 minutes before cooking. This ensures even cooking.
If you want to cook the steak in the oven, preheat the oven to 400°F (200°C).
Season both sides of the steak generously with salt and pepper.
Heat a cast iron skillet over high heat until very hot. Add olive oil to the pot.
Place the steak in the skillet and sear until cooked through, about 2 to 3 minutes on each side. Flip the steak and add the butter, garlic, and fresh herbs (if using) to the pan.
Pour the butter over the steak and cook for another 2-3 minutes, depending on your desired doneness.
To finish cooking in the oven, place the pan in the preheated oven and cook until desired doneness.
Remove the steak from the pan and let it rest for 5 to 10 minutes before slicing. This will allow the juices to distribute throughout the steak.
Serve immediately, spooning remaining butter and pan juices from skillet over steak.
