  •  2 cups all-purpose flour
  •  2 cups granulated sugar
  • 1 cup softened unsalted butter
  • 1 cup whole milk
  •  4 large eggs
  •  2 teaspoons vanilla extract
  • 1 tablespoon baking powder
  •  1/2 teaspoons salt
  •  1 cup raspberry jam
  • 2 cups shredded coconut (for coating)

For the whipped cream glaze:

  •  2 cups cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

. Preheat oven to 350°F (175°C) and grease four 8-inch round cake pans.
. In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla essence.

. Spread a layer of raspberry jam on the cake base and add a layer of whipped cream mixture.
