Italian Creamy Tuscan Chicken Pasta

Ingredients

2 tablespoons olive oil
2
tablespoons unsalted butter
2
pounds boneless, skinless chicken breast
1/2
teaspoon salt
1/8
teaspoon black pepper
1
teaspoon Italian seasoning
2
cloves of garlic
3
cups baby spinach
8
ounces sun-dried tomatoes, drained
3
cups cream
1/2
cup Parmesan cheese
1/2
pound penne pasta

Instructions

Season and cook chicken
Sprinkle
salt and pepper on both sides of the chicken breasts.
In
a large cast iron skillet, add olive oil and sear the seasoned chicken on both sides over medium heat.
Chop
the chicken and set aside
Let
cool and then cut into cubes.
Make
creamy Tuscan sauce
Make
the sauce by sautéing butter, minced garlic, sun-dried tomatoes (drain the oil), and spinach over medium heat.
Once
the spinach is wilted, add the cream and bring to a simmer. Remove from heat and add salt, pepper, Italian seasoning, and grated Parmesan cheese.
Add
chicken and pasta to sauce
Then
add back the warm cooked penne pasta and chicken cubes. Stir everything gently and enjoy.
