Hawaiian Bliss Roasted Chicken
Ingredients:
- 4 pounds of chicken
- 1 tablespoon vegetable oil
- 1 fresh pineapple, halved and cut into 1-inch pieces
- 2 limes (cut into quarters)
spice mix:
- 1 teaspoon salt
- 1 teaspoon coriander
- 1 teaspoon powdered cumin
- 1/2 teaspoon cinnamon
- 1/2 teaspoon white pepper
- 1/2 teaspoon cayenne pepper
glaze:
- 6 ounces pineapple juice
- 1/4 cup apple cider vinegar
- 2 tablespoons light brown sugar
- 1 tablespoon paprika
- 4 cloves garlic (crushed)
- 2 serrano chili peppers (sliced)
Hawaiian Bliss Roasted Chicken
Direction:
Preheat oven to 425°F. Prepare pineapple, mango, and lime.
Combine spice mix ingredients in a small bowl.
Rub the spice mixture all over the chicken, making sure it’s well coated.
Heat oil in a large oven-safe skillet over medium heat. Roast the chicken, breast side down, until browned and crispy, about 5 minutes.
Arrange pineapple slices in the bottom of the roasting pan. Place the chicken on top, skin side up, and place the mango and lime around it. Roast in the oven until internal temperature reaches 165°F, about 40-45 minutes.
To make the glaze, combine all ingredients in a saucepan over medium heat and simmer until thickened, about 12 minutes. Brush chicken with glaze during the last 5 minutes of roasting.
Let the chicken rest for 10 minutes before serving. Serve with roasted pineapple and mango (omit the lime) and pan juices.
