French Fries Balls
Ingredients
3 tablespoons remaining mashed potatoes
3 slices cooked and crumbled bacon
2/3 tsp. grated cheddar cheese
2 tablespoons thinly sliced chives
1/2 teaspoon. garlic powder
kosher salt
freshly ground black pepper
2 eggs, beaten
1 1/3 tsp. Breadcrumbs Breadcrumbs
Vegetable oil for frying
French Fries Balls
Directions
In a large bowl, combine the mashed potatoes, bacon, cheddar cheese, chives, and garlic powder and season with salt and pepper. Stir until all ingredients are mixed.
Place eggs and bread crumbs in separate shallow bowls. Using a small cookie scoop, form mashed potato mixture into 1- to 2-inch balls. Roll into a ball in your hands and dip first in the egg and then in the breadcrumbs. Repeat until all potatoes are used.
Heat 3 inches of oil in a large cast iron skillet until a candy thermometer registers 375°. Fry the potato balls in batches until golden brown on all sides. 2 Remove to a paper towel-lined plate and immediately season with additional sauce.
