2 pounds beef tenderloin, cut into 2-inch strips
2 bell peppers, sliced ​​(preferably red and green for color)
1 onion, sliced ​​
3 garlic cloves, chopped
1/4 cup soy sauce
1 tablespoon cornstarch
1 tablespoon sugar
1/2 teaspoon black pepper
1/4 teaspoon grated ginger
14 ounces beef broth
2 tomatoes, diced
1/4 cup water

Beef strips Place in Dutch oven.
Add bell pepper, onion, and garlic to beef.
Mix soy sauce, cornstarch, sugar, black pepper, ground ginger, and beef bouillon in a bowl. Pour this mixture over the beef and vegetables in the pot.
Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Add tomato wedges about 30 minutes before serving. Mix 1/4 cup water and another tablespoon cornstarch and stir in the pot to thicken the sauce.
Serve hot over rice or noodles.
