Ingredients:

  • 2 servings of pork ribs (about 1.6 kg)
  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional for sharpening)
  • 1 cup barbecue sauce

Preparation:

1. Remove the membrane from the back of the ribs for easy access with a knife; Paper Towel Absorbs seasonings and softens.
2. Combine brown sugar, paprika, garlic powder, onion powder, cumin, salt, black pepper, and cayenne pepper in a bowl and wipe dry.
3. Apply generously to both sides of the ribs.
4. Preheat grill to 225°F (107°C) for indirect heat or oven to 275°F (135°C) for indoor cooking.
5. Wrap the ribs tightly in aluminum foil and place on the grill (indirect heat) or in the oven.
6. Cook for about 2 to 3 hours or until the ribs are tender and the meat falls easily off the bone.
7. During the last 30 minutes of cooking, remove the foil and brush the ribs with barbecue sauce. When grilling, heat directly over the heat to caramelize the sauce.
8. Let the ribs rest for 10 minutes before cutting into individual pieces.
