Ingredients:


crust:

  •  1 1/2 cups chocolate chip cookie crumbs
  • 1/3 cup melted unsalted butter
  • 2 tablespoons granulated sugar

Cheesecake filling:

  •  24 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  •  1 teaspoon vanilla essence
  • 1/2 cup sour cream
  • 1/2 cup cream
  • 1/2 cup caramel sauce

Chocolate ganache:

  • 1 cup chopped dark chocolate
  • 1/2 cup cream
  • 2 tablespoons unsalted butter
  • 1/4 cup caramel sauce (for drizzle)

topping:

  • Whipped cream
  • Chocolate curls or shavings
  • caramel sauce

Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.

Combine chocolate chip cookie crumbs, melted butter, and sugar in a bowl. Press the mixture into the bottom of the prepared pan.

Bake the dough for 10 minutes, remove from the oven and let cool.

Cheesecake filling:

Place cream cheese in a large mixing bowl and mix until smooth. 2. Add sugar and stir until well mixed.

Add eggs one at a time, beating well after each addition. Mix in vanilla essence. 4. Mix the sour cream and heavy cream until the batter is smooth and creamy.

Pour half of the cheesecake batter over the base.

Pour half of the caramel sauce over the dough.

Repeat with remaining batter and caramel sauce.

Use a knife to create swirls in the dough. 9. Bake for 55-60 minutes or until center is set and edges are lightly golden.

Let the cheesecake cool in the oven with the door open, then place in the refrigerator for at least 4 hours or overnight.

Chocolate ganache:

Heat the cream in a small saucepan until it begins to boil.

Pour the hot cream over the chopped chocolate and let it rest for 1 minute.

Stir until chocolate is completely melted and smooth. 4. Add the butter and stir until the mixture is glossy.

Pour the chocolate ganache over the cooled cheesecake and spread it evenly.

Pour the caramel sauce over the ganache.

Refrigerate for another 30 minutes until the ganache is set.
