Classic Hibachi Chicken with Fried Rice and Vegetables

Ingredients:

– 1 pound chicken breast (cut into bite-sized pieces)
– 2 cups cooked rice (preferably a day ahead)
– 1 cup mixed vegetables (carrots, peas, corn)
– large egg, lightly beaten 2 pieces
– 3 tablespoons of soy sauce
– 1 tablespoon of sesame oil
– 2 tablespoons of vegetable oil (divided)
– 2 cloves of garlic (chopped)
– Salt and pepper to taste
– Green onions and sesame seeds for garnish

Preparation:

frying pan or wok Add 1 tablespoon of vegetable oil to the pan and heat over medium heat. Add the chicken, season with salt and pepper, and stir-fry until golden brown and cooked through. Remove from the pan and set aside.
2. Add the remaining vegetable oil to the same skillet. Add garlic and mixed vegetables and saute until softened.
3. Move the vegetables to one side of the pan, add the beaten egg to the other side and stir until completely cooked.
4. Add rice, boiled chicken, soy sauce, and sesame oil to a pot. Stir everything together and cook until the rice is cooked through and crispy on the bottom.
5. Garnish with green onions and sesame seeds before serving.
