Cheese and Bacon Bread Rolls



70 g butter, softened at room temperature
300 ml whole milk
3 tsp dry yeast
500 g bread flour
1 egg
1/3 cup white sugar (you may want to reduce the amount of sugar) .
1 teaspoon salt
2 tablespoons powdered milk
2 tablespoons oil
Egg wash:
1 beaten egg
1 teaspoon milk


200 g chopped bacon, or as much as you like
220 g grated mozzarella cheese, or Desired amount

Cut the butter into cubes and soften at room temperature. Warm the milk in the microwave for 50 seconds. Mix the milk with a spoon, add the dry yeast and mix. Let stand until yeast foams.
Add flour, sugar, salt, and milk powder to an electric mixer fitted with a dough hook attachment. Mix well. Add milk and 1 egg on mixer speed 3 until well combined.
Slowly add the butter cubes to the mixer on speed 3. Once the butter is incorporated, mix the dough on speed 3 or 4 for 5 minutes. Then let the dough rest for 3 minutes and continue mixing for another 20 minutes.
After 20 minutes, check the elasticity by pulling the dough with your fingers. The dough is ready when it stretches about 2cm without tearing. If not, continue mixing until done. An example is in the image above.
When ready, place oil in a large mixing bowl. Grease your hands with oil and remove the dough from the mixer. To make it easier to handle, brush the outside of the dough with a little oil and roll it into a ball with your hands. Place the dough in a large mixing bowl and cover with a tea towel or plastic wrap. Let rise in a warm place for 1 hour.
After 1 hour, remove the dough and weigh out 50g each.
Grease your hands with oil and shape the dough into a ball. Place them about 1.5-2cm apart on a baking sheet lined with baking paper. See photo for example.
Cover the dough and let rise for another 45 minutes, until doubled in size.
When the dough is ready, preheat the oven to 180 C / 356 F. Then brush each piece of bread with egg and place chopped bacon on top. Sprinkle cheese on top of each loaf. Bake in the
180 C / 356 F fan oven for 20-25 minutes or until nice and golden brown.
Immediately remove the buns from the baking sheet and place on a cooling rack to allow air to remain above and below the buns.
