Oreo Crust

2 cups Oreo crumbs
4 tablespoons butter, melted

Coconut filling

2 tablespoons + 2 teaspoons cornstarch
1 1/2 cups milk
1/2 cup sugar
14 oz sweetened condensed canned milk
chopped 1 1/2 cups coconut
1/2 teaspoon vanilla extract
1/2 teaspoon coconut extract


Chocolate sauce for decoration
Shredded coconut
Whipped cream

1. Melt. Add the butter to the Oreos, add the breadcrumbs, and mix until everything is well combined.
2. Press the Oreo mixture evenly into the bottom and sides of a 9-inch cake pan and set aside.
3. In a small bowl, combine cornstarch and 1/4 cup milk. Set aside.
4. Add the remaining milk, sugar, sweetened condensed milk, coconut flakes, vanilla, and coconut extract to the saucepan and stir over medium heat until well combined and warmed.
5. Add cornstarch mixture to coconut mixture.
6. Bring the mixture to a boil, stirring constantly with a whisk. It will start to get darker.
7. Once boiling, continue stirring for about 2 minutes until completely thickened.
8. Pour the mixture into the crust and refrigerate until set.
9. Once the cake is set, drizzle with chocolate sauce and sprinkle more coconut flakes on top.
10. Pipe the whipped cream around the edges of the cake and sprinkle the flaked almonds over the top of the cake. Refrigerate until ready to eat.
