Addictive Spinach Stuffed Pastry


For the dough:
  • 2 onions, chopped
  • A pinch of green onion leaves, chopped
  • 500 grams of spinach, chopped
  • A pinch of parsley, chopped
  • 1 cup (200 ml) of kefir
  • 1 teaspoon of water ( 90 ml)
  • 1 teaspoon salt (8 grams)
  • 1 egg white
  • 3.5 cups flour (420 grams)
  • 1 teaspoon butter (15 grams)
  • 1 tablespoon vegetable oil (12 ml)
  • Sesame seeds for garnish and black cumin seeds
For the filling:
  • 1 tsp (5 g) red pepper flakes
  • 1 tsp (4 g) salt
  • 1 tsp each black pepper, cumin, mint
  • Chili or green pepper (optional)
  • Kefir 1 tablespoon
  • vegetable oil 1 tablespoon

For the dough:

1. In a mixing bowl, combine the finely chopped onion, green onion leaves, chopped spinach, and chopped parsley. .
2. Add kefir, water, salt and egg white and mix well.
3. Add the flour little by little and continue mixing until the dough comes together.
4. Knead until you have a smooth and elastic dough. Add 1 teaspoon butter and 1 tablespoon vegetable oil. Knead again until everything is well mixed.
5. Divide the dough into 9 equal parts and form balls.

For the filling:

1. In a separate bowl, combine red pepper flakes, salt, black pepper, cumin, mint, and hot or sweet pepper (optional).
2. Make a paste-like mixture by adding 1 tablespoon of kefir and 1 tablespoon of vegetable oil.

How to assemble:

1. Take a ball of dough and roll it out into a thin circle.
2. Place a spoonful of the prepared filling in the center of the dough.
3. Fold the dough in half to create a crescent shape and press the edges to seal.
4. Repeat process with remaining dough balls and filling.
5. Place the filled dumplings on a baking sheet.
6. Mix the egg yolk with the kefir and vegetable oil and brush onto the pastry.
7. Sprinkle sesame seeds and black cumin on top.

To bake:

1. Preheat oven to 180°C (350°F).
2. Bake the pastry in the oven for 25-30 minutes or until golden brown.
