Loaded Baked Potato Salad
Ingredients:
8 medium russet potatoes
1 cup sour cream
1/2 cup mayonnaise
1 package cooked and crumbled bacon
1 small onion, chopped
Chives (to taste)
1 1/2 grated cheddar cheese Cup
Salt and pepper to taste
Loaded Baked Potato Salad
Preparation:
Wash the potatoes and cut them into bite-sized pieces. Pour water and simmer until tender, about 20-25 minutes. Drain the potatoes and let them cool. Once cooled, mix mayonnaise and sour cream. Add onions, chives, and cheese. Salt and pepper to taste. Top with additional grated cheese and bacon and enjoy.
