The Real-Deal Reuben Sandwich
Ingredients
8 slices of rye bread
1 pound corned beef, thinly sliced
1 cup sauerkraut (drained)
8 slices of Swiss cheese
Russian or Thousand Island dressing
butter for grilling

Instructions
Prepare the ingredients.
Drain the sauerkraut well. Too much water can make your sandwich soggy.
If your corned beef isn’t pre-sliced, slice it thinly.
Assemble the sandwiches.
Spread a generous amount of Russian or Thousand Island dressing on one side of the bread.
Layer corned beef, sauerkraut, and Swiss cheese on 4 slices of bread (dressing side up). Top with remaining bread slices, dressing side down.
Grill the sandwiches.
Heat a skillet or grill over medium-high heat.
Brush the outside of each sandwich with butter or melt the butter in a skillet.
Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3 to 4 minutes per side. Press lightly with a spatula to bake evenly. Serve warm:
When the sandwich is perfectly cooked, remove it from the pan.
Cut in half and serve immediately.

Corned Beef: For the best flavor, use fresh corned beef sliced from the deli. You can also use leftover corned beef if you have it.
Types of cheese: Swiss cheese is the traditional cheese, but try other varieties like Emmentaler or Gruyère. Bread Choice: Rye bread is traditional with its unique flavor, but you can also use pumpernickel or marbled rye bread.
