Creamy Tuscan Shrimp
Ingredients
▢2 tablespoons olive oil
▢2 tablespoons butter
▢1 pound shrimp, deveined and tailed
▢Salt (optional)
▢Pepper (optional)
▢3-4 cloves garlic, minced ). )
▢1 cup halved cherry or grape tomatoes (or sun-dried tomatoes)
▢3-4 cups baby spinach
▢3/4 cup cream
▢1/4 cup freshly grated Parmesan cheese
▢Thinly sliced 2 tablespoons chopped basil (or parsley)
Creamy Tuscan Shrimp
Directions
Heat the oil and butter in a large frying pan over medium heat. Once the oil is hot and the butter has melted, add the shrimp, sprinkle generously with salt and pepper, and sauté for 1 minute.
Remove the shrimp from the pot and set aside, then add the garlic, tomatoes, and spinach to the same pot. Stir-fry for 1 minute until garlic is fragrant.
Add cream, Parmesan cheese, and basil and mix. Reduce heat to medium and simmer until sauce reduces slightly, about 2 to 3 minutes. Return the shrimp to the pot and stir to combine. Taste and adjust salt as needed.
