Meatloaf with Mashed Potatoes and Cheese

Ingredients:

1 1/2 pounds ground beef, (85/15)
1/4 yellow onion, chopped
2/3 cup seasoned dry breadcrumbs
1/3 cup whole milk
1 large egg pieces, lightly chopped
1/2 teaspoon kosher salt
1/4 teaspoon coarsely ground black pepper
2 pounds potatoes (peeled and cut into 1-inch pieces)
1/2 teaspoon unsalted butter 3 cups
1/2 cup whole milk
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/2 cup cooked and crumbled bacon bits
1 cup grated cheddar cheese

Meatloaf with Mashed Potatoes and Cheese

Directions :

Preheat oven to 375 degrees.
Combine beef, onion, breadcrumbs, milk, eggs, salt, and pepper in a large bowl, mix gently, and press into a 9×9 baking dish.
Bake uncovered for 15 minutes, remove excess fat and drain.
While the meatloaf is cooking, put the potatoes in a saucepan and bring to a boil over high heat with enough water. Let’s cook for 15 minutes.
Drain, add milk, butter, salt and pepper and puree until creamy.
Spread over the meatloaf and top with cheese and bacon.
Bake for another 15 minutes, until the bacon is cooked through, the cheese is bubbly, and the mashed potatoes are slightly crispy.
