Pimiento Cheese Gougeres
Ingredients:
2 cups water
2 eggs
1 egg yolk (for brushing)
1 teaspoon salt
5 cups flour
125 grams beef butter or margarine
200 grams beef cheese

Directions:
Preheat oven to 350 °F to Preheat. (175℃) Prepare a baking tray lined with baking paper or lightly greased.
Boil 2 cups of water in a saucepan. Add butter or margarine and salt and stir until completely melted.
Once the mixture is melted and well mixed, remove from the heat and allow to cool slightly.
Place the eggs in a large mixing bowl and gradually add the cooled butter mixture, stirring constantly.
Slowly add the flour and mix until a dough forms. Depending on the consistency of your dough, you may need to adjust the amount of flour slightly.
Once the dough is ready, knead it on a floured surface for a few minutes until it is smooth and elastic.
Roll out the dough into a rectangle or desired shape, about 1/4 inch thick.
Grate or crumble the cow’s cheese evenly over the dough, leaving a small border around the edges.
Starting from the long edge, carefully roll up the dough to form a tight block.
Cut the tree trunk into pieces approximately 2.5 cm thick and place on the prepared baking sheet.
Whisk the egg yolks in a small bowl and brush over the surface of the dough disk until golden brown.
Bake in the preheated oven for 25-30 minutes, or until the cheese bread is golden brown and cooked through.
