peasy chicken pot pie
Ingredients
1 pound cooked chicken, chopped
1 cup frozen mixed vegetables
1/2 cup chopped onion
1/4 cup butter
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
Chicken 1 3/ 4 cups broth
2/3 cup milk
1 unbaked 9-inch pie crust

Directions
Preheat oven to 425°F.
In a large pot, fry the vegetables and onions in butter until soft.
Add flour, salt and pepper and mix. Gradually add the broth and milk, stirring constantly.
Bring to a boil. Stir for 2 minutes until thickened.
Add chicken and stir-fry. Removed from heat.
Pour the mixture into the cake base.
Cut a slit in the top of the crust.
Bake for 40 minutes or until the dough is golden brown.
