Triple Chocolate Cookie Cake
Ingredients
300g softened unsalted butter
300g light brown sugar
Granulated sugar 100g
2 large eggs
1 teaspoon vanilla essence
Cocoa powder 75g
Flour 375g
1 teaspoon baking powder
white chocolate 200g
milk chocolate 200g
200g dark chocolate
100g melted white chocolate (for drizzling)
100g melted milk chocolate (for drizzling)
100g melted dark chocolate (for drizzling)
Triple Chocolate Cookie Cake
Instructions:
Preheat the oven to 180C/160C fan and line a 9-inch round cake tin.
Cream the butter, light brown sugar, and granulated sugar until light and fluffy.
Add eggs and vanilla extract and mix again.
Mix cocoa powder, flour and baking powder until a thick dough forms.
Mix white chocolate, milk chocolate, and dark chocolate evenly. Press the cookie dough into the prepared pan and smooth the surface.
Bake in the preheated oven for 25 to 30 minutes, or until the edges of the cookies are golden brown and the centers are just set.
Let the cookies cool in the pan for 10 minutes, then transfer to a wire rack.
Once cooled, pour melted white chocolate, milk chocolate, and dark chocolate to create triple chocolate.
