The Softest 5-Minute Cake in the World
Ingredients:
3 medium eggs
Pinch of salt
8 g vanilla sugar or vanillin
150 g sugar
Lemon zest
Sunflower oil 120 ml
Milk 150 ml
Flour 250 g
Sweet yeast 16 g
Decoration:
Apricot Jam
Coconut Rasp Shell
The Softest 5-Minute Cake in the World
Directions:
Place the eggs in a bowl, add salt, vanilla sugar, and a pinch of sugar and mix until creamy.
Add lemon zest, sunflower oil and milk. Mix well.
Gradually add the flour and sweet yeast. Mix until smooth.
Pour the batter into a 27x28cm mold.
Microwave on high for 5 minutes (microwave power may vary, so adjust accordingly). Check with a toothpick. It should now be clean.
Let the cake cool.
Spread apricot jam on top and sprinkle with coconut flakes.
