Sweet Potato Pound Cake
Ingredients:
- 1 package
- cream cheese, softened
- 1/2 cup butter, softened
- 2 cups sugar
- 4 large eggs
- 2 1/2 cups mashed sweet potatoes
- 3 cups all-purpose flour
- 2 teaspoons baking powder tablespoons
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon or nutmeg (optional)
- 1 teaspoon vanilla extract
Sweet Potato Pound Cake
Directions:
- Step 1: Preheat oven to 350°. Beat cream cheese and butter in a high-performance electric stand mixer on medium speed until creamy. Add sugar little by little and mix until light and fluffy. Add eggs one at a time and mix until no longer yellow. Add sweet potato and stir well.
Step 2: In a medium bowl, combine flour, next 3 ingredients, and optional cinnamon. Gradually add flour mixture to butter mixture, mixing on low speed until combined after each addition. Add vanilla and stir. Place dough in a greased and floured 10-inch (12-cup) tube pan.
Step 3: Bake at 350° for 1 hour 5 minutes to 1 hour 10 minutes, or until a long wooden skewer inserted into the center comes out clean. Let cool in the tin on a wire rack for 10 minutes. Remove from the pan to a rack and allow to cool completely (about 1 hour).
Step 4: Sweet Potato Pound Cake Loaf: Prepare batter according to instructions. Pour into two greased and floured 8 1/2 x 4 1/2 inch loaf pans. Bake according to instructions and let cool.
