Stuffed Potato Cakes
Ingredients:
– 4 large potatoes, peeled and cooked
– 1 cup cheddar cheese, grated
– 1/2 cup chopped green onions
– 1/4 cup all-purpose flour
– 1/4 cup sour cream
– 2 tablespoons unsalted butter
– 1 egg, beaten
– Salt and pepper to taste
– Oil for frying
Stuffed Potato Cakes
Preparation:
1. Mash the cooked potatoes in a large bowl until smooth.
2. Mix cheddar cheese, green onions, flour, sour cream, melted butter, beaten eggs, salt, and pepper until well combined.
3. Form small patties from the mixture.
4. Heat the oil in a frying pan over medium heat. Fry the patties until golden and crispy, about 4-5 minutes per side.
5. Enjoy warm with your favorite dipping sauce.
