Spicy Beef Taquitos
Ingredients:
1 tbsp chili powder
1 tsp garlic powder
1/4 tsp onion powder
1/4 tsp shrunken red pepper flakes Oregano
1 1/2 tsp ground car Elsalz
1 tsp black pepperĀ 1 lb. 95 Lean ground beef %
1/2 cup salsa (I used medium heat, but adjust to taste)
3 ounces 50% reduced fat pepper jack cheese, grated (I used Cabot
16 6-inch corn tortillas (I used Mission Extra Thin Yellow Corn)
Spicy Beef Taquitos
Directions:
Preheat oven to 400 degrees. Line a baking sheet with foil and lightly spray with cooking spray. Set aside.
Make your own taco seasoning by stirring together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt, and pepper in a bowl. Set aside.
Large Heat a nonstick frying pan over medium heat and add the minced meat. Cook, stirring with a wooden spoon, until the beef is completely browned and broken into pieces. Allow the fat to drain from the pan. Add the taco seasoning and salsa from step 2 and mix until well combined. Pour the mixture into a mixing bowl and add the grated cheese. Stir to combine.
Place about half of the tortilla between two paper towels and microwave until warm and pliable, 30 to 60 seconds. Place the tortilla on a clean, dry work surface and place 2 tablespoons of the beef filling in the bottom third of the tortilla. Roll the tortilla from bottom to top to enclose the filling. Roll into a tube and place seam side down on the prepared baking sheet.
Repeat steps with remaining ingredients (includes heating the other half of the tortillas in the microwave if you received them). After rolling all the taquitos onto a baking sheet, spray the tops of the taquitos with cooking spray.
Place the baking sheet in the oven and bake until the tortillas are golden brown and crispy, about 15 minutes. enjoy ! !
