Southern Potato Salad
Ingredients:
– 2 pounds Yukon Gold potatoes, peeled and diced
– 1 cup mayonnaise
– 1/4 cup yellow mustard
– 1/4 cup sweet pickle relish
– 4 hard-boiled eggs, chopped
– 1 /2 cup chopped celery
– 1/4 cup chopped red onion
– Salt and pepper to taste
– Paprika for garnish
– Chopped fresh parsley for garnish
Southern Potato Salad
Preparation:
1. Diced potatoes Place in a large pot and cover with water. . Bring to a boil over medium-high heat, then reduce heat to medium-high and simmer until potatoes are tender, about 10 to 15 minutes.
2. Drain the potatoes and let them cool slightly.
3. Combine mayonnaise, mustard, and sweet pickle relish in a large bowl.
4. Add the cooled potatoes to the bowl along with the chopped eggs, celery, and red onion. Mix gently until everything is well coated.
5. Season with salt and pepper.
6. Cover and refrigerate for at least 1 hour before serving.
7. Garnish with paprika and fresh parsley before serving.
