ROASTED GARLIC MASHED POTATOES
Ingredients
1 garlic clove
1 teaspoon olive oil
2 pounds red potatoes, washed and cut into quarters
Kosher salt
6 tablespoons butter
3/4 cup half and half
Freshly ground pepper
ROASTED GARLIC MASHED POTATOES
Directions:
Roast the garlic – cut off the top 1/4 inch from the garlic head. Wrap the garlic head in foil and drizzle the garlic with olive oil. Close the foil around the garlic and roast in a 375 degree F oven for about 1 hour.
Garlic will be very soft and golden brown when ready. You can easily squeeze the garlic out of the skin when you want to use it.
Place the potatoes in a large pot or casserole dish and cover with cold water. Add 1 teaspoon salt and bring to a boil. Simmer for 15 minutes or until tender.
Drain the potatoes and return them to the pot with the roasted garlic.
Heat the halves and the butter slowly until the butter melts (this can be done on the stovetop or in the microwave).
Add potatoes, garlic, salt, and pepper to the pot. Puree until the milk and butter are combined and the potatoes have a creamy consistency with some lumps.
Serve with fresh herbs and butter.
