Ingredients
1 beef sirloin (4-5 pounds)
Olive oil
Add salt and freshly ground black pepper separately.
1c.Packed light brown sugar
1 tablespoon cornstarch
1/2 teaspoon dry mustard
2 tbsp. Unsalted butter

Instructions
1- Preheat oven to 500°F.
2- Place the beef roast in a large Dutch oven or roasting pan. Rub roast with olive oil. Sprinkle salt and pepper on all sides. 3- Place the roast in the oven. When making the sauce, pay attention to the sounds coming from the oven. When you hear the roast begin to sizzle, reduce the temperature to 250°F.
4- Meanwhile, heat the brown sugar, cornstarch, mustard, butter, vinegar, Coca-Cola, and a pinch of salt and pepper in a small saucepan. Cook, stirring occasionally, until the mixture thickens. 5- Roast until internal temperature reaches 160°F. Brush with sauce frequently while roasting.
6- Serve roast with remaining sauce, if desired.
