Hawaiian Banana Bread
Ingredients
1/2 cup softened butter
1 cup sugar
2 large eggs
1 very ripe banana, mashed
1 cup crushed pineapple (do not drain)
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup shredded coconut

Instructions
Preheat oven to 350 degrees.
Cream the butter and sugar in a large bowl with a mixer until light and fluffy. Add eggs one at a time and mix.
Add mashed banana and pineapple and mix.
In a separate medium bowl, combine flour, baking powder, baking soda, and salt. Add to wet ingredients.
Add coconut flakes/chips and stir.
Pour mixture into a greased 9×5 loaf pan. Bake for 60 minutes or until a toothpick comes out clean.
