Garlicky Lemon Shrimp with Asparagus
Ingredients:
– 1 pound large shrimp, peeled and deveined
– 1 bunch asparagus, peeled and cut into thirds
– 2 tablespoons olive oil
– 4 garlic cloves, minced
– Freshly squeezed 1 lemon
– Salt and pepper to taste
– Red pepper flakes (optional)
Garlicky Lemon Shrimp with Asparagus
Preparation:
1. Warm the olive oil in a large skillet over medium heat.
2. Add the garlic and saute until fragrant, about 1 minute.
3. Add the asparagus to the skillet and cook for 3 to 4 minutes, or until tender and crisp.
4. Add the shrimp to the pot and season with salt, pepper, and red pepper flakes (if using). Cook shrimp until pink and opaque, 2 to 3 minutes per side.
5. Stir in the lemon juice and zest and cook for another minute to combine the flavors.
6. Garnish with additional lemon zest if desired and serve immediately.
