DELECTABLE LAMINGTON CAKE
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup softened unsalted butter
- 1 cup milk
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract /2
- Pinch of salt
- 1 cup desiccated coconut
- 1/2 cup raspberry jam
DELECTABLE LAMINGTON CAKE
Directions
Preheat oven to 350°F (175°C) and grease a square baking pan.
. In a mixing bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Add vanilla extract and stir.
. In a separate bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk, stirring until well combined.
. Pour the batter into the prepared tin and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
. After baking, let the cake cool for 10 minutes, then transfer to a wire rack to cool completely.
. Cut the cake into squares and carefully dip each square into the raspberry jam, covering all sides.
. Roll the jam-dusted squares in the shredded coconut, pressing gently so the coconut sticks to the cake.
. Place the finished square lamington cake on a plate and cool it in the refrigerator for an hour before eating.
