Crock Pot Chicken Thighs Recipe
Ingredients:
8 bone-in, skin-on chicken thighs
1 tablespoon olive oil
Salt and pepper
3/4 cup ketchup
1/3 cup soy sauce
1/3 cup honey
3 tablespoons minced garlic
1/2 teaspoon onion powder
1/4 tsp dried thyme
1 tsp dried parsley
1/4 tsp dried mustard
2 tbsp fresh chopped parsley – optional

Directions:
Heat the olive oil in a cast iron or heavy skillet. Season the chicken with salt and pepper and fry, skin side down, until golden brown. Remove the chicken from the skillet and place it in the Dutch oven, skin side up.
In a medium bowl, add ketchup, soy sauce, honey, garlic, onion powder, dried thyme, dried parsley, and dried mustard. Mix everything and pour over the chicken.
Cover the Dutch oven and cook on high for 3 hours or on low for 5 hours, until the chicken is cooked through and the sauce thickens.
Remove the chicken and place on a plate. Pour the sauce from the bottom of the casserole over the top, sprinkle with fresh parsley and serve.
