Cranberry Marshmallow Jell-O Salad
Ingredients:
1 (3 oz) package Cherry Jello
1 (3 oz) package Lemon Jello
7 oz Jellified Cranberry Sauce
1 cup boiling water
Cream Cheese 1 (8 oz) package, room temperature
Vanilla Extract 1/2 tsp
1 (15 oz) can of mandarin oranges, drained
1 (8 oz) can of crushed pineapple, drained
1 cup Cranberry Sprite (or lemon-lime soda)
1/2 cup chopped pecans
Mini marshmallows 1 1/2 cups
1 (8 oz) carton Cool Whip, Thaw, Divide
Cranberry Marshmallow Jell-O Salad
Directions:
Dissolve
gelatin in water.
In a mixing bowl, mix cream cheese and vanilla until fluffy.
Add Jell-O and jellied cranberry sauce and stir until smooth.
Add pineapple, orange, lemonade, and pecans.
Mix until incorporated.
Chill in the refrigerator for about 30 to 40 minutes, and when lifted with a spoon, it will form a lump. Add Cool Whip
¾ and mini marshmallows.
Pour into a 9 x 13-inch pan or bundt pan.
Refrigerate for 3 to 4 hours or until firm.
Garnish with remaining Cool Whip. When serving in a
pan, this will yield approximately 16 squares for a 9×13 pan or approximately 8 squares for a bundt cake.
