Chocolate Mousse Cake
Instructions
Make the Chocolate Cake:
-
Preheat oven to 350°F (175°C). Grease and line the bottom of a 9-inch springform pan.
-
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
-
Add buttermilk, vegetable oil, egg, and vanilla extract. Beat until combined.
-
Gradually add the hot water (or coffee) and mix until the batter is smooth.
-
Pour into the prepared pan and bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
-
Cool completely.
Make the Chocolate Mousse:
-
Melt the chopped chocolate in a microwave-safe bowl or over a double boiler until smooth. Let it cool slightly.
-
In a separate bowl, whip 1½ cups heavy cream with powdered sugar and vanilla extract until soft peaks form.
-
Fold the melted chocolate into the whipped cream gently until fully incorporated.
Assemble the Cake:
-
Place the cooled cake layer at the bottom of a clean springform pan.
-
Spread the chocolate mousse evenly over the cake.
-
Refrigerate for at least 2–3 hours, or until the mousse is firm.
Make the Chocolate Ganache:
-
Heat heavy cream until just simmering (do not boil).
-
Pour over the chocolate chips and let sit for 2–3 minutes, then stir until smooth.
-
Let the ganache cool slightly, then pour over the set mousse layer and smooth out evenly.
Decorate:
-
Once the ganache is set, pipe whipped cream around the edges.
-
Garnish with chocolate truffles, chocolate shards, and extra chocolate chips if desired.
