Chicken and Green Bean Stir Fry
Directions:
In a large bowl , add the diced chicken and 1 tablespoon of oil. Add the garlic powder and 1/2 teaspoon salt and pepper and rub the chicken. Add cornstarch. Mix until all chicken is coated with cornstarch.
In a large skillet or wok over medium heat, add 3 tablespoons of vegetable oil until shimmering. Add the chicken little by little. Do not overcrowd the pot. You will need to turn the chicken frequently to ensure it cooks evenly. If the pan looks dry, add more oil as needed. When the chicken is done, set it aside and cook a second batch until crispy or desired consistency.
Add the peppers and fry until desired softness. Next, add the minced garlic and fry until fragrant. Add chicken, green beans, sweet chili sauce, sesame oil, ginger, and crushed red pepper to the pot. Stir until well mixed and chicken and green beans are coated with chili sauce. Serve immediately over rice.
