Broccoli Cauliflower Cheese Soup
Ingreients
3 tablespoons butter
1 small yellow onion (chopped)
4 cloves garlic (chopped)
1/4 cup all-purpose flour
2 1/2 cups chicken or vegetable broth
2 and a half cups at room temperature
2 cups broccoli florets, chopped
2 cups cauliflower florets, chopped
1 carrot (grated)
Dijon mustard 1/2 teaspoon
2 cups grated cheddar cheese
Kosher salt and freshly ground black pepper to taste

preparation
Melt the butter in a Dutch oven or large pot over medium heat. Add onions and cook until softened, about 4 minutes. Add garlic and cook for another minute.
Stir in the flour and continue stirring until you start to smell the flour baking (about 2 minutes).
Add the stock, mix, cut in half and season with salt and pepper. Add broccoli, cauliflower, carrots, and mustard and bring to a gentle simmer. Simmer until vegetables are tender, about 15 minutes.
Remove from heat, add a handful of cheese and stir until melted. Please adjust the seasoning as needed and enjoy. enjoy!
