Braised Oxtails
Ingredients
1 tablespoon olive oil
Cut 2 pounds of oxtail into 2-inch pieces
1 tablespoon salt
1 small onion (coarsely chopped)
2 tbsp. minced garlic
1/2 cup red wine
1/2 cup Worcestershire sauce
5 cups beef soup
1 teaspoon ground black pepper

1. Heat the olive oil in a heavy-bottomed pot. Dust the oxtail with the seasoned flour and brown on all sides. Remove; place on paper towel to drain excess oil. 2. Preheat beef broth in a heavy-bottomed pot, add garlic, black pepper, onion, red wine, and Worcestershire sauce and bring to a boil.
3. Add the browned oxtail, lower the heat, cover and simmer. Continue cooking the tails for 2 1/2 to 3 hours. Stir occasionally to prevent sticking. When the liquid has reduced, add 2 more cups of boiling water and continue cooking until tender. Make your own sauce this way. 4. Once the oxtails are tender, remove them and add the sauce to a bowl. Enjoy with rice, mashed potatoes, pasta, etc.
