Italian Sausage Peppers and Onions
Ingredients
- 1/4 cup extra virgin olive oil
- 1 pound sweet italian sausage
- 2 green peppers (sliced)
- 2 yellow onions (sliced)
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon Italian seasoning
- 1/4 cup chopped fresh basil leaves
- 4 cloves garlic (chopped)
- 2 tablespoons tomato paste
- 1 cup Marsala wine (or chicken soup)
- 1 can (15 oz) diced tomatoes
- Salty to your liking
- 1/4 teaspoon red chili flakes (optional)

How to make Italian sausage with peppers and onions
Heat the oil in a large, heavy skillet over medium-high heat. Add sausage and cook until browned on both sides, about 7 to 10 minutes. Remove from the pot and drain the water.
Place the pot over medium heat, add the Italian seasoning, basil, and garlic and cook for another 2 minutes.
Stir in the Marsala wine, tomatoes, and tomato paste, and add chili flakes if desired. Add bell pepper, onion, salt and pepper and bring to a simmer.
Return the sausage to the pot with the vegetables. Reduce heat and simmer for 15 minutes or until sauce thickens.
Serve over mashed potatoes, pasta, polenta, or cauliflower rice. If serving as a sandwich, cut hoagie rolls in half lengthwise. Scoop out the bread from the bottom of the pan, being careful not to damage the dough. Fill the bottom half of the roll with the sausage mixture.
