LADY BIRD JOHNSON’S LEMON CAKE
Ingredients
3/4 cup soft butter
1 1/4 cup sugar
8 egg yolks
2 1/2 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1 teaspoon vanilla extract
2 teaspoons lemon Juice
1 teaspoon grated lemon zest
LADY BIRD JOHNSON’S LEMON CAKE
Directions:
Preheat oven to 325°F.
Mix butter and sugar until fluffy.
In a separate bowl, beat the egg yolks until lightly lemon-colored. Stir into cream mixture.
Mix flour, baking powder, and salt. Sift again three times. Add the sifted ingredients to the cream mixture, alternating with the milk in three additions.
Mix well after each addition of batter.
Add vanilla extract, lemon zest, and lemon juice.
Beat for 2 minutes.
Bake in a greased bundt oven for 1 hour or until a cake tester inserted into the center comes out clean.
Remove from the oven and let cool for 19 minutes, then flip onto a plate.
Lemon Glaze
Powdered Sugar 2 Cups
1-2 T. Fresh Lemon Juice
1-2 T. Buttermilk
Fresh Lemon Zest.
