Baked BBQ Baby Back Ribs
Ingredients:
- 1/2 cup ancho chili powder
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 cup salt
- 2 tablespoons freshly ground black pepper
- 1 tablespoon powdered cumin
- 1 teaspoon dry mustard
- 1 teaspoon ground cayenne pepper
- 1/2 teaspoon dried chipotle pepper
- 1 serving of baby back pork ribs
- 1 cup barbecue sauce
Baked BBQ Baby Back Ribs
Preparation:
Preheat oven to 250 °F (120 °C).
Whisk in a small bowl until well mixed.
Place ribs meat side down on aluminum foil. Stab the back of the ribs several times with a knife.
Apply a generous layer of dry wipe to all sides of the rib rack. Fold the foil, meat side down, around the ribeye to ensure a tight seal. Place it on the tray.
Bake in the preheated oven until tender and cooked through, about 2 hours. Remove and let cool for 15 minutes.
Increase the oven temperature to 350°F (175°C). Open the foil, drain and discard any accumulated juices and fat. Spread barbecue sauce all over the grill.
Return the rack to the oven, meat side up, leaving the foil open. Bake for 10 minutes, then remove from the oven and brush only the sides of the meat with barbecue sauce. Repeat baking and basting four more times for a total baking time of 50 minutes. Cut the rack into individual rib segments and serve with additional barbecue sauce.
