Loaded Potato Soup
Ingredients:
4 large potatoes, diced
enough water to cover the tops of the potatoes
1 cup chopped onion
2 cups milk
3 chicken bouillon cubes
2 tablespoons flour
2 tablespoons dried parsley
Garlic powder 1/2 teaspoon
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon hot sauce
1 cup grated cheddar cheese for garnish
Loaded Potato Soup
Preparation:
Place a 4-quart pot over medium heat, add the potatoes, cover with water (about 3 to 4 cups), and cook through. Add milk, diced chicken, onion, parsley, garlic basil, salt, pepper, hour sauce, and 1 slice of bacon. Mix well. Add the flour quickly and mix until there are no lumps and the mixture is thick. Reduce heat and simmer for 10 minutes, stirring occasionally. Add cheese and stir until melted.
Dice the remaining bacon and garnish the soup. Pour the soup into bowls and garnish with cheese.
