Bourbon Chicken with Broccoli
Ingredients:
- 4 boneless chicken thighs, cut into 1-inch pieces
1 cup broccoli florets
3 tablespoons cornstarch, minced
3 garlic cloves, minced
1/2 cup apple juice
1/2 cup bourbon
1/2 cup chicken broth
2/3 cup soy sauce
1/3 cup brown sugar
1/4 cup ketchup
1/4 teaspoon ground ginger
1/2 teaspoon red pepper flakes
1/4 teaspoon black pepper
1/2 teaspoon salt
2 teaspoons apple cider vinegar
4 tablespoons vegetable oil, divided
Bourbon Chicken with Broccoli
Directions:
- Season chicken with salt and pepper. Mix with 2 tablespoons cornstarch. Set aside.
In a bowl, combine bourbon, broth, soy sauce, cider vinegar, apple juice, ketchup, brown sugar, ginger, garlic, and pepper flakes. Set aside.
Over medium heat, add 2 tablespoons oil and cook broccoli florets, stirring frequently, until tender, about 5 minutes, then set aside.
Over medium heat, add remaining oil to skillet and add chicken. Cook for 3 minutes per side, remove and set aside.
Mix 1 tablespoon cornstarch and 1 tablespoon cold water. Set aside.
Add the bourbon sauce mixture and bring to a boil. Add the chicken and simmer until the sauce is reduced (about 10-12 minutes). Add the broccoli back in and stir in the cornstarch slurry. Garnish with sesame seeds and serve.
